C's Alternative Cheesecake

Q: What do you bake for the birthday of a beefcake who eschews sweets and desserts?
A: A low fat, low carb high protein cheesecake!

Basically modified the earlier cheesecake recipe as follows:
  1. Substitute 3 x 8oz low fat cream cheese for the 3 x 8oz regular cream cheese
  2. Mix cheese together with 3 eggs
  3. Add 2 cups of grated tasty low fat cheese and 1 cup of chopped ham to the mixture
  4. Top with chopped semidried tomatoes, pesto and pinenuts
  5. Bake at 150 deg for 2 hours
